Tomato Pie

INGREDIENTS:
- 9 inch pie crust
- 5 medium size ripe tomatoes sliced (sandwich size) or same weight in cherry tomatoes
- 1 cup chopped green onions (including green tops)
- 1 Tablespoon chopped fresh oregano
- 1 Tablespoon chopped fresh basil
- Salt and Pepper to taste
- 2 cups grated sharp cheddar cheese
- 1 cup mayonnaise
- ½ cup grated Parmesan cheese
DIRECTIONS:
- Preheat oven to 400 degrees
- Prick pie crust with a fork.
- Bake for 10 minutes and remove from oven.
- Reduce heat to 325 degrees.
- Gently blot tomatoes between paper towels.
- Cover bottom of crust with 2 layers of tomatoes.
- Sprinkle ½ of the green onions, oregano and basil-
- Season with salt and pepper.
- In a bowl combine cheddar cheese and mayonnaise, mix till blended and spread ½ the mixture over tomatoes.
- Repeat layering with the tomatoes, green onions, herb, mayc
- Spread and season. Top with parmesan cheese.
- Bake about 45 minutes till golden and firm.
- Let pie cool slightly before slicing
