INGREDIENTS:

  • 9 inch pie crust
  • 5 medium size ripe tomatoes sliced (sandwich size) or same weight in cherry tomatoes
  • 1 cup chopped green onions (including green tops)
  • 1 Tablespoon chopped fresh oregano
  • 1 Tablespoon chopped fresh basil
  • Salt and Pepper to taste
  • 2 cups grated sharp cheddar cheese
  • 1 cup mayonnaise
  • ½ cup grated Parmesan cheese

DIRECTIONS:

  1. Preheat oven to 400 degrees
  2. Prick pie crust with a fork.
  3. Bake for 10 minutes and remove from oven.
  4. Reduce heat to 325 degrees.
  5. Gently blot tomatoes between paper towels.
  6. Cover bottom of crust with 2 layers of tomatoes.
  7. Sprinkle ½ of the green onions, oregano and basil-
  8. Season with salt and pepper.
  9. In a bowl combine cheddar cheese and mayonnaise, mix till blended and spread ½ the mixture over tomatoes.
  10. Repeat layering with the tomatoes, green onions, herb, mayc
  11. Spread and season. Top with parmesan cheese.
  12. Bake about 45 minutes till golden and firm.
  13. Let pie cool slightly before slicing
