Sweet Potato Greens

INGREDIENTS:
- Sweet Potato Greens with tender small stems
- 2 teaspoons finely chopped garlic
- 2 tablespoons extra virgin olive oil
- 1/4 cup chopped onion
- 1 teaspoon sea salt
- 1/2 teaspoon red pepper flakes
DIRECTIONS:
- Clean Sweet Potato Greens removing tough stems. Wash thoroughly in cold water, several times to remove all the dirt. Roughly chop stems and leafy greens. Set aside.
- In a 12 inch frying pan over medium heat, add olive oil and sauté onion and garlic for 2 – 3 minutes or until translucent, add chopped greens, season with red chile flakes and salt.
- Cook for about 5 – 10 minutes or until the stems are cooked through. Mix frequently to cook greens evenly.
