INGREDIENTS:

  • 2 lbs washed and diced yellow squash
  • 4 T. margarine
  • 1/2 c. chopped onion
  • 1/2 c. grated mild cheddar cheese
  • 1/2 c. mayonnaise
  • 1 tsp. sugar
  • 1 egg
  • Freshly crumbled buttery crackers

DIRECTIONS:

  1. Preheat oven at 350°. Cook squash in boiling, salted water until tender, about 5 to 7 minutes. Drain well.
  2. Sauté onions in margarine until wilted. Combine with drained squash. Fold in cheese, mayonnaise, sugar, egg, and salt and pepper to taste.
  3. Pour into greased 1 1/2-quart casserole dish. Top with cracker crumbs. Bake uncovered at 350° in preheated oven for 30 minutes. Serves 8.
