  • 1 carcass of a roasted chicken ( break into sections to make sure it fits into the pot)*
  • 1/2 large onion cut into chunks*
  • 2 stalks celery chopped into pieces*
  • 1 sprig of rosemary*
  • 1 tablespoon kosher salt
  • 1 bay leaf
  • Enough water to cover the chicken and vegetables in a large heavy pot


  1. Combine all ingredients and bring to a boil, then reduce to a simmer and cook for 45 minutes.
  2. Strain out the chicken bones and bay leaf. You can leave the vegetables in for more flavor and body or strain them out, your choice.
  3. Now you are ready to build a hearty soup of your choice!
