Roasted Chicken Stock

Ingredients
- 1 carcass of a roasted chicken ( break into sections to make sure it fits into the pot)*
- 1/2 large onion cut into chunks*
- 2 stalks celery chopped into pieces*
- 1 sprig of rosemary*
- 1 tablespoon kosher salt
- 1 bay leaf
- Enough water to cover the chicken and vegetables in a large heavy pot
Directions
- Combine all ingredients and bring to a boil, then reduce to a simmer and cook for 45 minutes.
- Strain out the chicken bones and bay leaf. You can leave the vegetables in for more flavor and body or strain them out, your choice.
- Now you are ready to build a hearty soup of your choice!
