INGREDIENTS:

  • Poblano peppers in quantity for 1 lb of stuffing
  • 1 cup Monterey Jack Cheese
  • 1 cup shredded cheddar cheese
  • Chopped green onions  – chopped Cilantro –(Papalo leaves)
  • 5 eggs separated – (egg whites beaten to peak)
  • egg yolks (5)  – combined with ingredients below
  • ⅓ cup milk
  • ½ cup Flour
  • ½ tsp. baking powder  
  • ½ tsp. salt
  • 1 lb.  barbacoa or ground beef seasoned with fajita seasoning

INSTRUCTIONS:

  1. Separate egg whites & yolks from 5 eggs.
  2. In a medium bowl combine egg yolks & milk. Beat in flour, baking powder, and salt until smooth.
  3. Beat egg whites until stiff & peaks form. – Fold egg yolk mixture into the beaten egg whites.
  4. Pour 1/3 mixture into bottom of a greased 10x6x2 baking dish.
  5. Clean Poblano peppers  & slice Lengthwise – remove seeds (They can be roasted on open flame or grill – then remove charred skin)
  6. Add ½ meat mixture ½ sliced poblano peppers & ½ cup of each cheese (layered)
  7. Add  a second layer of meat – sliced peppers  & cheese – sprinkle with green onions & cilantro
  8. Pour remaining egg mixture on top -Bake in preheated 350° oven for 20 – 30 until golden & center is baked.
